The Pacific sturgeon lives along the west coast of North America from the Aleutian Islands to Central California. It is the largest freshwater fish in North America and is the third largest species of sturgeon, after Beluga and Kaluga. The fish that produces this elegant caviar is raised in pristine conditions on aquafarms in California. The caviar is glossy, medium to large in grain, light grey to black in color, and has a mild, smooth nutty flavor.
